how deep dry wall

Hello I am a newbie here and I have a few questions.

What is the most and least gap between the brick wall and the plasterboard as i intend to do the dob and dab way, also can I tile over concret as when i removed the old tiles there is a solid block of concret covering the hole where a fire place was.
