Upstands are coming tomorrow, i plan on sticking them in place against the wall but do i need to stick them/seal them to the worktop as well???
These are walnut by the way. I will try and get some oil on them before fitting.

get a coloured sealant if you are confident with applying them to a good standard.
If you aren't, then it would be worth getting in a professional mastic man to do it for you. They will probably have a good match for colour and they don't charge that much.
I do good quality sealant finishes but I still get the pros in when there is a good metreage of it to do. Mine charges me about £40 to do a bathroom; all internal corners, round bath, basin, toilet. If it is fully tiled then he also does floor to wall and ceiling to wall. All in about half an hour. Compared to my two hours!
