Main tiles are 200x200, they do not have a glazed edge, I was going to finish the half height areas of the mosaic, and the upright edges of the main tiles with trim mitred into each, other unless there is a better option?.

It is fine to finish the trims the way you are going to do them. Due to the thickness of the mosaic you should use an 8mm trim, but this will depend on which trim you decide to go for.
Have a look at www.genesis-aps.com for tile trims and these are available at Nichols and Clarke. You will have to search for other suppliers if you haven't got nichols near to you. I find these trims better than the Homelux that you get in Topps and DIY stores, they come in longer lengths too. Schluter systems also do a good range of trims.
The whole area of the bath ideally should be tiled full height, due to the shower, rather than only part tiled to full height.
