Olive has upgraded & I want to use her 5s. I understand I need to unlock it or get it unlocked, but how do I get rid of all her guff; email, FB etc etc without deleting all stuff for her? The phone is currently updating everything without a SIM card fitted!

Do you mean remove everything from the phone but not affect anything stored elsewhere? You can reset the phone which will not delete anything in her Facebook etc but will wipe the phone. This is Apple's own guide: https://support.apple.com/en-gb/HT201351

Take note of the bit about logging out of iCloud first...
