I never thought.........

.....that I'd ever eat a Jacket Potato without any butter, but I made this a few weeks ago (and a couple of times since), and we both really like it.

For each sensible sized spud.

1 clove of Garlic - (or more if you like things really garlicky)
1 level Tsp salt
2oz grated Cheddar
1 Dsstp of the creamy salad dressing of your choice - (I've been using a Blue Cheese dressing).

Cook the spuds as you would normally - until they're done.

Pound up the garlic with the salt and then add to the cheese and salad dressing.

Cut the top third off the spuds and scoop out the insides and then mix with the cheese etc. stuff the filling back in the spud and bake for another 20 minutes.

That sounds mouth-watering, ayjay - SWMBO has put 'us' on a blood-sugar diet that has not involved potato of any sort, pasta, rice or bread for the last month or so.

I have to say I haven't missed the carbohydrate - have discovered cauliflower rice - and tonight's rib-eye* without my buttered & mayo'd jacket spud but stuffed mushroom instead was just fine. Egg scrambled (no toast) in a frying pan with spinach; avocado with sardines, runner beans & fried halloumi.....

Eye opening, should have tried these recipes years ago.

* Aldi do two types, can't tell the difference so the cheaper is fine, much better value than the big multiples offerings.

Sounds very nice indeed, will have to ask the wife to make us some as I can only manage beans on toast
