Plastering around windows

Dear all
I have a question about plastering around the bay windows, which have just been changed. When they changed them, they also removed the old wooden internal casings (they were rotting down).

Now I am left with a gap between the wall and the window (photo 1 and 2).

I came up with 2 solutions (see photos):
Option 1: make a square cover on the old wall, dotting and dabbing the 2 parts and skimming on top

Option 2: dotting and dabbing a straight plasterboard from corner to corner.

Moreover, as you can see from photo 2 the main wall has an angle of about 135degrees, but the walls between the windows are straight.

Any ideas?

Be careful with dot n dab there. May need DPC against these sections of brickwork if 4" thick? Battens with doc between brickwork and boarded may be better option?

I think that's a typo and Oz actually meant "dpc" as in damp proof course like this one.

I would get some lengths of treated timber and staple the DPC to it (the one above is 100mm so might need trimmed). The timber would then be fixed to the brickwork with the DPC side against the brick. This stops any moisture being transferred into the timber and then into the internal finish.

Next, I'd fix plasterboard to the timber and then finish with plaster. You might need to fill gaps between the plasterboard and edge of windows with expanding foam (if the gaps are big ... hopefully not!) or decorators caulk.
