As you can see there is a 3 core and earth at the fan (Black, Brown and White, Normally it would be grey, not white)

At the switch there is:
A twin and earth (Brown and Blue) I am ok with that.
A 3 core and earth (Blue, Red, Yellow) That is the old colours for 3 core and earth.

Which means...............

There has to be a junction somewhere, where they join/change over. You are going to need to find it. Probably in the loft? When you find it, take a picture please.

After a lot of searching, think I’ve found two junction boxs linked with this...
The first one has the brown/blue 2core with earth going to the pull chord joining with another brown/blue/black 3core (assume this is the lighting ring). The black in this is still covered so terminates here. I assume all is good here.

The second one has the old colours red/yellow/blue 3core and earth joining with what I assume is the extractor fan wires (brown/grey/black).
As you can see, the brown goes to the switch live red, the black goes to neutral blue and the grey grey wire meets the yellow...which has been left hanging in the pendant...is this the issue? If so, where should that terminate in the pendant?

At the switch what voltage do you get between the two blues (in a choc bloc) and the genuine Brown (NOT the yellow with sleeving, and not the red with sleeving)

At the switch:
This will be "interesting" you may have to pull the 3 core and earth down a bit.
Connect the Yellow (with brown sleeving) to the SAME terminal as the Plain brown.

At the fan:
Connect as follows:
Black to terminal N (Probably still there)
White (I think it may be grey) to terminal L
Brown to terminal LT

Switch mains back on, listen to fan, is it running?
If it is running leave it for 5 minutes, does it stop
If it does not stop, pull the cord ONCE wait five minutes does it stop
If It is not running pull the cord ONCE fan should start
Wait 5 minutes (Fan should still be running)
Pull cord ONCE wait 5 minutes fan should stop.

That seems to have done the trick.
Fan is on, then stays on for the 2minutes timer after the pull cord is off, so seems all is well and good.
Thanks for your patience, for taking the time out the past couple of evenings and putting up with all the quoting, ha.

I figured it would.

Thanks for letting us know all is well (Don't often get feedback) But also take away from this, that quoting whole replies on ANY forum is bad etiquette it is annoying.
