I've noticed there are several different types of corner beads. I'm looking for one to attach to a stud corner. Which one should I use and why are there different types?

Agree with DWD. Thin, to hide under the skim, sometimes called a pro-bead.
The middle one is for solid walls, skimmed a little thicker, the mesh enables it to be bedded in place in advance of getting to the corner.
The right hand one is a render bead for sand & cement.
