Exterior Door + Frame Gap

Just had a new exterior door and frame fitted but above the door there are gaps on either side. The area is hollow so no brickwork and as you can see from the images there are slats + plasterboard.

On the inside, for the larger 5-10cm gap I plan to cut plasterboard to fit the gap, glue (plasterboard adheshive) to the slats, then skim as I have done small jobs with plaster inside the house.

Outside, the gap is thinner and smaller (<1cm mostly) but there is nothing behind the gap, the slats finish above the remaining board so I can really work against something. As per the picture, the gap to right is larger and I was considering maybe feeding glued horizontal strips of plasterboard to then work against that. Any ideas? Also, I have done some lots of filling and some plastering small jobs inside the house but nothing other than filling outside. Can I still use regular plasterboard and multifinish or do I render? They used expanding foam in the gaps on the sides of the door but nothing here, could this be something also to use? The door is under a covered porch area so not directly against the elements but obviously still exterior.

What's to the front? I would pull the internal lathe and plaster off and remake it with a new facia board outside (if applicable) and replace the inner with plasterboard, For good measure I would fill the void with insulation.

Filling interior and exterior door frame gaps

After having a new door and frame fitted, I have 1cm+ wide and 2cm+ deep gaps both inside and outside either side of the door frame.

Is Toupre interior for inside and Toupret exterior for outside good enough here? Expanding foam was used but some are quite large/wide gaps and I have only used both for smaller patching. I was considering mortar than skimming for inside but if Toupre interior and exterior are good enough alone I will happily go for this?

For remaining mm gaps and to seal I plan on using a good external frame sealant that I have used in the past (e.g. everbuild).

Thanks. The front seems to be plasterboard with lathe and plaster also but I assume some rendering for the outside finish. The height is 20cm so it's a small space above the door frame. Ripping it out and having a solid insulated structure is probably a good idea, thanks.
