Which is the quicker way to dry the plastering?
My kitchen was plastered earlier this week and I was told that plaster dries quicker in hot weather than in cold.
As it's cold at the moment (unfortunately), I have two options, leave the windows open or keep them closed.
Which will dry the plastering quicker in the cold weather?

Let it dry slowly otherwise it will crack or craze.

Maybe just a crack to let the moisture out. As you have no heating on the fabric of the structure will be cold and opening the windows will not hasten drying and the moisture released will condense on the coldest surfaces.

Yes. Plaster contains a large amount of water - it needs to escape the room

Thanks. I wasn't sure if opening the windows and making the room colder would slow down the drying of the plaster.

would a dehumidifier not both give gentle heat and remove moisture aiding drying ??

I ran the water in the kitchen just now and a few drops went on the plaster.

Preempting a potential disaster will be to know how to paint this new plaster. You will need to do a mist coat, an ordinary emulsion watered down to 4:1 paint/water mix. This will sink in and provide a good key for the finishing full-strength coats.
