Thistle Undercoat v Bonding - what's the difference

This is my first time plastering after watching a million YouTube videos so have probably got this all wrong!!
I am repairing the channels after a re-wire. I have used Thistle Undercoat for the base layer. I was going to let it dry and use Make Good Jointing and Filler as the skim cos it's supposedly easy to apply and sand. However, even after after a day I can still scratch the surface, so it's not bone dry yet.
I was going to use Bonding but they didn't do the small bags, so I bought Undercoat instead. I can't figure the difference between the two types, so I thought Thistle Undercoat would be ok for the job.
What's the best way to skim and finish this job now?
