How do I replace flush hinges with regular?

How do I replace flush hinges with regular?

Recently bought a house and need to clean up and re-varnish the doors. Two of the doors however have flush hinges which I don’t like and want to replace with regular loose pin hinges like in the photo. How do I go about this so the door stays in alignment? Can I measure up whilst the door is in place?

Re use that exisiting hinge mortice and cut an opposing one in the door to mount the new hinge. I think the door gap for the lay-on hinge will be similar to the new.
