I would like to change the toilet seats and I have a couple of questions on how it is done

1/ I assume not all toilet seats come in the same size ? How do I get the right size and shape. I have the old one.

2/ I have a back to the all toilet pan. In order to undo the screws I have to remove the pan from the wall and get to the screw bits I need to change the seat.
I am concerned that once I remove the pan and put it back again will it seal up the waste and cistern in flow.
I cannot see a way of changing the seat without removing the pan from the location to get to the back.
I can kind of see the cistern and the pipe work from the top as the top shelf comes off to get access to the bits behind.

That toilet seat is a "top fixing" no need to access underneath. The 2 chrome buttons on the inside of the hinge when pushed will release the top part of the seat, just lift it off, the cchrome covers on the remaining part will prise off revealing a plastic plug that can usually be removed one way or another.

You'll need another top hung toilet seat as a replacement. (probably an identical one from the original manu.)

Personally, unless there is a fault with the existing seat I'd leave well alone.

Then the silver cups will clip off - around the edge will be a small slot and they lift off, to reveal a screw - which you can losen and tighten to align the lid up to the bowl

i have a couple of these - mine a comfort height - and i had to replace a lid and it was around £90 ............ as the lid cannot take any weight - so with the lid down - you cannot sit on them

i do remove the cups and clean all around that area , as it does get dirty over time, and often come lose and do not align

The seats do come off , I get that bit
The pillar on left is wobbling around ! Pic attached

I put a camera down the back and I can see threaded pillar thing being held on by a plastic nut

Prise that chrome cap off and you might be able to get it in position and tighten the screw to firm it up.

Unfortunately the silver cups will not budge, neither of them. The one on the right is fine but that wont come off either
The one on the left is wobbling a lot but it wont come off either

I have used a fair amount of force, unless these is a technique to get them off

yep, look for a tiny slit and you can lift carefully with a screwdriver or small plastic
mine would not move - i did use some limescale remover around - but it was this tiny slit that helped

i have slide a 1mm plastic spacer around so as not to damage the bowl with a screwdriver
and flicked a bit - and used a couple of 1mm plastic around and tried to lift off from both sides , if you like so they come off square

I think I will have to have another look for the slit .. as I cannot see it , the make of the seat for my one is different to your

yepo, had to do that a couple of times and we have 2 of these toilets
one of which i had major issues with and asked a question here

hopefully with some thin strong plastic you maybe able to lever from front and back or twist both sides to ease off - maybe by using a plastic bottle - cut up and may get under the space anyway and then twist

Another idea to try is to wrap the cap with a thick rubber band to give you a grip and try twisting. Avoid mole grips as they will pinch it and make it grip harder. Try Viakal or vinegar to release any calcification binding it on.
