Help with changing a light fixture.
I am trying to change one of the lights in my sitting room. (I changed the other one which had only one of each - live, neutral and earth, so it was easy to switch over)

The second one (picture attached) , the original fixture had three wires (all with black sleeves) 1 black wire going to live (I assume this is live, even though it should have been red as per old colour code), there are two black wires going to neutral and 1 earth wire (yellow / Green).

I am not sure how to connect the wires which are going to blue - should I use both the existing black wires going to neutral (twisted together) or only one ?

I always try to keep the existing rose back plate if the new fitting will accommodate it; otherwise you need to keep the same grouping; the 2nd picture is not clear, does the existing fitting, brown from lamp connect into the left terminal with one black, as there are only two receptacles and is there any in the middle 3 receptacles?
The new terminal strip cannot accommodate all the wires, if the old middle is being used and if not used unlikely to be large enough for more than two wires; I have a variety of Wago connectors for that task.

BeautifyHouse, as aeromech3 said, it is most unlikely that you will be able to use the choc bloc on the new light fitting, they are always too small, so take his suggestion of using wago connectors. You can get 10 of them (always handy) for less than a fiver Click Me

I would also suggest you put a piece of tape on the single black before you take the rose down, that way you know that it is the switched live, and NOT a neutral.

If it helps, believe it or not, there is no colour code for UK lighting, it is up to the person installing it what colour they use, yes it should be marked with coloured sleeving, but it often isn't.

Thank you for your very practical suggestion to retain and reuse the existing back plate. I was able to reuse it in my new light fitting and that worked.

Thank you ! I have added a red sleeve to the live before using the old back plate and retaining the old wiring and that works now.

Your photo of the backplate of the existing ceiling rose shows the earth wires coming into the rose as twisted together but not secured in the earth block. The brass square next to the end of the earth wires. I hope you have put the wires back into the block and connected the earth from the new light fitting to this block.
