My built-in fridge-freezer is hard-wired into a fused unit which has on/off switch. Similar posts suggest cutting the plug off the new fridge and hard-wiring that in, or changing the fused-hard-wire-unit into a socket which the new fridge can plug into. However my fused-hard-wire-unit is in an awkward position to work on.
Alternatively could I cut the mains lead and put a 1-gang extension socket onto the end dangling from the hard-wired-unit and plug the new fridge into that?

Having unsupported socket(s) is not a good idea. You would only have to change the Fused Connection Unit once. (Go on, you know you want to change it)

I was going to double tape the extension socket to the kitchen cabinet, or could I use an unswitched socket screwed to the cabinet wall and in series with the fused-hard-wire-unit?

Most refrigeration devices tell you not to use an extension lead, mainly to ensure there is not excessive volt drop where multi-fuses are used. I do see your idea one of these on the original cable would make it easy, you have to consider if that would be a reasonable idea.

Tape will fail after a while. You could have changed the FCU to a single socket by now.
