Tile adhesive on a fireplace

Hi,
I want to retile a fireplace around an open coal fire. There is a gap between the fire back and the old marble surround of around 1" and the old fillet of mortar is cracked. The new tiles will be laid on top of the marble surround, slightly extending over the edge so that I get a neat finish.
I have a three questions:
1. What is the best tile adhesive to use?
2. What is the best grout?
3. What should I use as a "mortar" fillet to fill the gap between the front edge of the fireback and the marble.tile surround?

Thanks
