Bathroom refit

Sorry about the noobish nature of these questions. I'm just getting my head around a bathroom refit where i have to rip everything (including the floorboards) so I'm just back to walls, joists and pipes, and would appreciate some help to enable me to tackle things in the right order.
I'm OK with tiling and plumbing from working on my kitchen and various small scale DIY for family, but I'm looking at the bathroom suite and it's got me boggled. Most of the stuff I've read hasn't started from the "totally back to the plaster" scenario I'm in.
Couple of tiling questions.
[1] Do I secure the bath to the bare plaster wall, and then tile up from it toward the ceiling, then seal. Or do I tile the wall to below the bath rim height and go from there. I'm guessing it's got to be the former! (Probably obvious once you've fitted one!).
[2] Same deal with the wash basin. I'm going to be starting with floorboards and a plaster wall. I'm guessing I fit the basin to the plaster wall and then tile around it. No hang on, most of the weight is carried by the pedestal right, so it's not like it's hanging off the wall, maybe you can attach it to a tiled wall. Gah!
