Is there a set size of notched trowel that is used on any given surface?
i.e. Concrete floor, wooden floor, walls etc or does it depend on the type and size of tile, adhesive etc?

Notch sizes to the trowel depend on size of tile, if it is going onto a wall or floor and also what type of tile it is. Tile type and size will also influence whether they should be back buttered and also the size of spacer used.
Size, tile and background also dictate which adhesives and grouts can be used.
