Hi there I would personally figure out where you want brackets place timber batten on wall preferably same thickness as your plasterboard plus dot and dabs.Draw around batten then remove plasterboard then screw batten to wall then screw brackets to timber.I have not used large screws or bolts but people will come along who have then it will be your choice to choose which way to go.

We always use 3"x10 screws with brown plugs on dot n dab Walls. (3 inch long x gauge 10 screws) and never have any problems. Here are a couple tips though...... Drill deep enough for the 3" screws and use 2 brown plugs - drill hole, put plug in hole, use a screw and hammer to tap the plug down the hole, remove screw, insert another plug then fix brackets.
Using 2 helps to stop the plug at the business end winding up the screw.
Tip 2... On breeze block Walls, use a 6mm drill bit instead of 7mm. Because of the nature of breeze blocks the drilled hole can be a tad baggy, a 6 mm hole will give your screws a good firm hold.

I've used Fischer High Performance Universal plugs in the past with 3" screws, they are pretty long and bridge the gap into the block.

Depends on how big the void is between plasterboard and brickwork.
If it's only a small amount then you can fix as normal or use 2 rawl plugs as already suggested above, if it's a very big gap then you may want to think about firing in some expanding foam in locations near to where you want your brackets, just little bursts no need for using whole cans all over the place as that may well pop your plasterboard if you use too much.
Or you can use fischer bolts as long as most of the bolt shank is in the brick not the void

That's quite small. I would double plug a gap like that. The other factor is how much drywall adhesive was used and how far apart it is. If there is a fair amount and they are close together then the board will not flex when you tighten the screw. If the adhesive is far and wide then I would insert the first plug, then inject just a little gripfill then put the second plug in and screw the bracket on.
TBH the brackets should be tight but not that tight that they start to pull the bracket through the plasterboard anyway. You'll be fine

the dot n dab was close as i remember i was using much more than i was recommended and putting lots round sockets/switches etc and so fingers crossed

sorry guys just a quick question, when i put the first plug in the hole do i drill a hole through that or just insert the next plug and then screw into both plugs

1) Drill the whole through both plasterboard and wall (Brown plugs = 7mm drill bit) about 3.5" deep
2) insert the plug into the plasterboard
3) next put a screw in the plug by just a few turns, then with a tap the screww with a hammer until the plug is firmly in the brick wall behind the plasterboard
4) remove the screw and insert the next plug so it is flush with the plasterboard
5) screw bracket to the wall (I'd use a 3" no.10, or if the bracket won't take it a 3" no.8)
