Homebrew

Post by scot-canuck »

Anyone else make their own wine / beer / cider?

I've just gotten into doing it and the results are improving, first cider was drinkable albeit slightly weird tasting (granny smith apple and blueberry....not the best combo)

First wine..strawberry, redcurrant and banana..not so great, added tea to boost the tannin, except put double the amount in by mistake and its a bit.......jaw clapping.....makes your mouth pucker...might improve with age....hopefully....if not...chalk it up to experience....

Second - carrot and ginger with a hint of cinnamon., turning out well....needs aged though as the alcohol taste is way too strong and needs back sweetened as its really dry as in totally sugar free, smells fruity but needs sugar added to bring out the fruit flavours.

Third wine - Carrot, orange, ginger and mixed berry - really nice (this is the one I thought would be vile....though its actually really nice and easily drinkable...colour is a bit weird...really really dark red beyond red wine) though fermentation not quite done, so likely will need back sweetened to bring it back to a drinkable sweetness and sizeable time to let it clear.

One plus, none of it smells like vinegar unlike so many supermarket wines....

My dad used to make wine, and I remember some white grape wine he made in '86. It was horrid, acidic and undrinkable. Having a clear out about 12 years later we found a couple of bottles and decided to open it to see if it was good enough to cook with... and it was gorgeous. Some wines just need time.
