Making walls good

Hi,

I bricked up a window in the bathroom and want to prepare walls for tiling. Will be looking to remove existing tiles and get a tiler to retile.

Should I strip the rest of the walls back to brick then plasterboard (moisture resistant) and tank the shower area?

Or would it be easier to carefully remove the tiles, leaving old adhesive in place, and then plaster the blockwork with sand+cement mix (or something else?) to make level with the old adhesive and let him tille onto that?
