Glass hob not flat

Hi, I'm fitting a Smeg glass/cermaic hob (SE385EMTB). My wooden worktop is flat, the hob it seems is not. When lying in the cut out the hob 2/3mm gap in centre, it is bowed. If I push down on the centre I can straighten it, but obviously pings back up when released.

The installation instructions say fit a supplied sponge gasket to rim and the fix to worktop with brackets on the underside at each corner. This is never going to pull the centre straight. I'm thinking maybe an option is to forget about the gasket and brackets and just silicone it down weighing the centre down until it drys. Or do you think I should I get a replacement from Smeg, which will be a massive hassle at this stage because the job needs to be finished already!

Hmm, not sure about omitting that gasket. Remember that the hob will have full pots of weight on and off, all the time... Feels like a replacement is needed
