In greece first coat (scratch) is applied like that.

It is just thrown at the wall no leveling. I found out that this is uncommon to uk/us etc. What do you think?

The stuff they use in Spain goes off very quickly hence all the rustic plaster work - its called Yeso Rapido in the USA they use a similar product called stucco in essence it all goes back to mud and dung huts, in the uk that would be wattle and daub
