Ras el Hanout

Post by ayjay »

Anybody else use this?

I quite like it used fairly liberally on a (flattened ) and quick fried Chicken breast but can't get any more of the same mix from Tesco.

I tried their latest offering and it really wasn't as good, it's fragrant and flowery and it's just got no kick to it at all, I almost didn't like it.

This (link below) is the one I'm after, but I can't seem to find the same mix anywhere.

Hi wine~o, the ingredients of the original are:-

Paprika (13%), Sugar, Crushed Roasted Coriander Seed, Sea Salt, Crushed Roasted Cumin Seed, Black Pepper, Chilli Flakes (6%), Fennel Seed, Roasted Cinnamon Powder, Dried Shallot Pieces, Roasted Pimento Powder, Turmeric Powder, Dried Rose Petals (3%), Mace, Pink Peppercorns, Roasted Cardamom Powder, Black Onion Seed, Ginger Powder, Nutmeg Powder, Roasted Clove Powder, Star Anise Powder

The new version, the one I don't like, is a lot less complex :-

Coriander (20%), Paprika (20%), Black Pepper, Ginger, Cardamom (10%), Allspice, Nutmeg, Turmeric, Cloves, Cayenne Pepper

 Not even remotely similar then; I was expecting some minor tweaks.. I've had a wee looky around and none of the other spice mixes I've found so far are close to the tesco finest..

No, I've had a look around too without any luck, unfortunately I can rarely read ingredient labels when I'm shopping, I need glasses for that - and I need glasses so rarely that I'm not in the habit of carrying them.

I guess I'll have to try badgering Tesco and see what they say.

How is the convalescing going?

Since you have a list and some rough proportions I think you might be best making your own :)

Ultimately, you may be correct, but that original mix is just spot-on, it's a hard act to follow.

I already make my own Pates and Terrines, Chutneys, Pickles, Baked Beans and a few other things, so one more won't hurt.

I could call it a hobby and add it to the list.
