Kitchen mosaic splash backs

Hi, I would like some advice on using 30cm x 30cm mosaics, I'm not sure where to have the starting point. Is best to start in the centre of cooker and work outwards both ways ?

Yes.

And the tip from someone (me) who cooks a lot is you will have a sh1t problem keeping the grout clean from oil and other assorted stuff :-(

Is it best to use plastic tiling edging along the top of splashbacks or silicone?

Plastic/chrome edging. As ochaye says mosaics are possibly the worst option for a cooker splash back though. Something solid and flat would be easier to keep clean. EG a sheet of stainless steel.
