Needing help or advice on selecting a colour for internal doors in a shopping centre the colour of the walls are a manhattan grey and was originally going for white skirting and architrave and maybe a darker grey on the doors

A wipe-clean paint finish would be a good idea, the colour would depend on potential touch staining and knocks expected. Also, shops need to be bright and welcoming to make people feel comfortable.
