I've got the two in Plug Ins
But all the old ones in Extensions have been removed, because I normally use the Add/Remove list to shift them when I update.
I have Java Update set to never check, and I normally check on teh Major Geeks site for any updates about once a month. That way you don't have Java doing its own thing when it wants to and you not knowing.
Java is one of the few programs that updates alongside old versions but does not auto remove the older ones.

Any number of ways.
Windows Control Panel -> Programs -> Add/Remove list and uninstakll from there.
Use Revo Uninstaller if you have it installed.
Open Firefox -> Tools -> Addons -> Extensions -> click each one and click uninstall -> click to restart Firefox.
