"Bubbles" in paper jointing tape? Have I used the wrong products?

Long story short, had a leak and ended up scraping all the artex off the kitchen ceiling, have a bad back so it's been an on / off "project" of mine to sort it. There's little gaps in the plasterboard joins so I've done as this guy has for cracks on youtube.

1. Using jointing compound from Screwfix (UK) https://www.screwfix.com/p/no-nonsense- ... -5kg/842rt I've filled the gaps (1mm)
2. Used paper tape on top, again a screwfix item https://www.screwfix.com/p/diall-paper- ... 50mm/619cf and applied it
3. Embedded the tape with more compound.

Thing is and I know it's nowhere near dry, but the tape looks like there are some "bubbles" like it's soaked the moisture from the compound? Wondering now if I should have used mesh instead :-( Anyone got any advice?

I never use paper tape, this stuff is far better https://www.screwfix.com/p/diall-fibreg ... 50mm/626cf

Then just give a light coat of filler over and sand lightly to feather the edge.
