Spot replacement of tiled wall?

Planning on replacing the bathtub which is starting to fade (no longer white - the grey primer is starting to show now)
We have the wntire wall tiled. Unfortunately the dimensions of tiles cannot be found but there are slightly larger and thicker tiles available (same pattern) so hopefully they can be cut and used.
First question: Can tiles be cut neat enough and straight enough to align together or are they only suited the cutting to fit into corners and edges?
Second question: Is it possible to just remove one row of tile and remove all the plaster without knocking off the row above it? I am a bit concered that if I try to chisel away the tile cement that it will knock the tiles above it loose.
